Fresh Salmon, center cuts
Lemon olive oil
Fresh or dried dill
Fresh lemon for garnish
Sea salt & fresh ground pepper
Line a baking sheet with foil. Drizzle lemon olive oil in the center and dredge your salmon coating both sides with oil. With the skin side down sprinkle the top with salt and pepper. Place on center rack in the oven and set the temperature to broil. Cook for about 6 minutes until the tops are golden brown. Check your salmon for doneness.
I like my salmon cooked medium. That’s the perfect place where it’s not raw in the middle but definitely not over cooked and dry.
To serve you may want to drizzle a little of the olive oil over the salmon, sprinkle with dill and garnish with lemon.
You may want to try different infused oils with this recipe and omit the dill. Try infusing your own oils, but do your homework before you start. The internet is a great resource.
