Tomato Grilled Bread SaladTomato Grilled Bread Salad

INGREDIENTS:
½ lb.                 Country bread cut into 3/4-inch-slices
¼ cup plus 2 tablespoons    Olive oil
4 cups                Tomatoes, diced into ¾” pieces
2 cups                Cucumber, diced into ¾” pieces
¼ cup                Fresh basil, loosely packed
1tablspoons            Red-wine vinegar
Salt & pepper

DIRECTIONS:
1. Heat grill to medium. Brush the bread slices on both sides with olive oil. Grill until lightly charred on both sides, 3 to 4 minutes. Let cool slightly; cut into large cubes.
 
2. In a large bowl, toss bread cubes with tomatoes, cucumber, and basil. Drizzle with vinegar and ¼ cup olive oil, season with salt & pepper. Toss to combine and serve!
