Greenbean and Feta SaladGreenbean and Feta Salad

INGREDIENTS:
1 lb.             Green Beans
2             Tomatoes cut into 1" chunks
1/2             Red onion, thinly slices
1/2             Red Bell Pepper, thinly sliced
1/2 cup         Feta cheese
1/3 cup         olive oil
2 tablespoons     white-wine vinegar
1 teaspoon         Dijon mustard
Coarse salt & ground pepper

DIRECTIONS:
Cook trimmed beans in salted water until crisp tender. Drain in a colander; run under cold water to stop cooking. Whisk olive oil, vinegar, mustard, salt & pepper. Toss beans, onions and peppers with vinaigrette; fold in tomatoes, feta cheese and serve.
